Instructions
Preheat oven to 350 degrees. Gather all your ingredients so that you have everything close at hand on the counter or table.
Prepare the Ingredients
Using a cutting board and bench or chef's knife, chop the dried cherries into small pieces.
If using whole almonds, chop the almonds into small pieces. Otherwise sliced almonds work well.
Make the Cookies
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar. Mix until light and fluffy.
Add large eggs and vanilla extract. Mix well.
In a small bowl, combine the all-purpose flour, salt, and baking soda. Add to butter mixture and mix well.
Stir in chopped dried cherries, white chocolate chips, and sliced almonds to incorporate.
Drop by large tablespoons 2" apart on baking sheets lined with parchment paper or silicone baking mats.
Bake in preheated oven for 12-14 minutes until golden brown. Cool on wire racks. Makes 2-3 dozen.
