Gather your ingredients so that you have everything close at hand on the counter or table.
Prepare the Ingredients
Using a knife and cutting board, slice the kielbasa into 1/2" pieces.
Leaving the peel on, dice the golden potatoes into small cubes. Place on a plate and pour 2 tablespoons of water over them. Par cook in the microwave for 3-5 minutes until the potatoes are slightly cooked in the center.
Dice the sweet onion. Mince the garlic, or use jarred minced garlic.
Make the Skillet Dinner
In a large cast iron skillet, cook the kielbasa in extra-virgin olive oil until lightly browned on each side. Once browned, add in the partially cooked cubed potatoes. Fry in the hot oil until light golden brown, stirring often, for about 7-10 minutes. If necessary, add more oil as needed.
Stir in the prepared sweet onion and minced garlic, along with the thyme and dried sage until incorporated. Cook for another 3-5 minutes on medium-low heat.
Now add the drained sauerkraut and cook for another 10 minutes until heated through. Stir once or twice. Season lightly with kosher salt and freshly ground black pepper. Garnish with fresh thyme.
This recipe will serve 4-6 people. Serve with a fresh salad and sliced bread, if desired.
