Instructions
Begin by adding softened butter and sugar to a mixing bowl and cream together until combined. Add eggs and almond extract to the batter.
In a separate bowl mix together flour, baking soda, baking powder, and salt. I like to sift the dry ingredients to make sure there are no lumps.
Slowly add the dry ingredients into the wet ingredients to form a dough.
After the dough has formed, cover and refrigerate to chill the dough for about 30 minutes.
Meanwhile, prepare a cookie sheet by either using a cooking oil spray or parchment paper to prevent sticking.
Evenly scoop out the dough and roll into balls and press the top of the dough ball into a bowl of almond slices.
Line the cookie dough balls onto the cookie sheet.
Bake at 375°F for about 10 minutes. (Times may vary a bit depending upon your oven and location, adjust accordingly)
Once baked, allow cookies to cool on a wire rack before enjoying. (Optional, top with an almond glaze while still warm.)
Prepare the Glaze
To make the almond glaze, in a small mixing bowl whisk together powdered sugar, almond extract, and water until combined.
Drizzle over cookies! Makes 2 1/2 - 3 dozen cookies.
