Secret #1 - Slice your own pork chops from a whole pork loin roast to get thick, juicy slices of meat at a discounted price. Works especially well when serving large groups. Slice pieces 3/4" - 1" thick.
Secret #2 - An hour before cooking, generously sprinkle each side of pork loin chops with Head Country seasoning. (If you haven't tried this seasoning, do so now! It is wonderful!) I'm guessing here, but maybe 1/2 - 1 teaspoon of seasoning per side, depending on how thick and big the slices are.
Grill over hot coals for 3-5 minutes on each side until juices run clear or internal temperature reaches 145 degrees. You may also broil in oven if desired. Serves 10-12

*You may also buy sliced pork loin chops or butterflied chops at the market. Just try to buy the thickest chops that you can find. Shopping for sales is always good, too.
