Preheat oven to 350 degrees. Spray an oblong or oval baking dish with baking spray. Grate your cheese.
In a large bowl, combine cream of chicken soup, sour cream, grated cheddar cheese, melted butter, onion, salt, and pepper. Stir in the frozen hash browns until thoroughly mixed.
Spoon into prepared baking dish. Sprinkle bread crumbs over the potato mixture. Bake in preheated oven for 45-60 minutes until cheese is bubbly and lightly browned. Serves 8-10.
