Whole Wheat Communion Bread

Preheat oven to 450 degrees. Gather your ingredients so that you have everything close at hand on the counter or table.
Using a small mixing bowl, combine whole wheat flour, all-purpose flour, and kosher salt. Mix together to combine.
Create a hole in the center and pour in the water and extra virgin olive oil. Using a fork or your hands, mix together until the dough comes together into a ball. Allow to rest for 15 minutes.
Divide the dough into 8 pieces. Roll each into a ball.
On a lightly floured surface, press each ball into a flat disk. Using a pastry rolling pin, roll into discs that are 6-8" wide. Discs will be about 1/8" thick.
Using a roller docker or a fork, prick the dough as you would a cracker. This will help prevent the dough from bubbling as it bakes.
Place each disc on a baking sheet. Sprinkle with sea salt.
Bake in preheated oven for 8-10 minutes until lightly browned along the edges. Cool on a wire rack. Makes 8 discs.
