Begin by gathering all your ingredients so that you have everything close at hand on the counter or table. Preheat oven to 400 degrees.
Peel, core, and slice the apple into small tidbit pieces.
Prepare the Dough
In a medium bowl, mix together the all-purpose flour, granulated sugar, baking powder, ground cinnamon, baking soda, and salt.
Cut in butter with a blending fork (or your hands) until the mixture becomes crumbly.
Create a hole in the center of the mixture, and add the heavy whipping cream, apple cider, and large egg. Mix together with a fork until it forms a ball.
Place dough on a lightly floured surface and fold in the apple pieces. Knead 4-5 times until the apples are incorporated. Pat the dough into a 9-inch circle.
Using a knife or bench scraper, slice the dough into 8 triangles. Place each piece on a baking sheet lined with parchment paper or a silicone baking mat. You could also use a scone pan, if desired.
Brush scones with heavy whipping cream and then sprinkle with sparkling decorating sugar. (If desired, you may add ground cinnamon to the sugar before sprinkling.)
Bake in preheated oven for 15-17 minutes until golden brown. Allow to cool for 5 minutes before serving.
Serve scones with your favorite tea or coffee. They are wonderful with a little honey butter or apple butter. Makes 8 scones.
