Gather your ingredients so that you have everything close at hand on the counter or table.
Using a paring or peeling knife, peel, core, and slice 2 medium Envy or Granny Smith apples into small chunks. Place in a medium-sized bowl, and sprinkle with 1/4 cup cornstarch. Stir to coat. Set aside.
Prepare the Fritter Batter
In a large bowl, whisk 2 cups all-purpose flour, 1/3 cup granulated sugar, 1 tablespoon baking powder, 1 teaspoon salt, 1 teaspoon ground cinnamon, and 1/4 teaspoon ground nutmegto combine.
Add 3/4 cup apple cider, 2 large eggs, and 2 tablespoons butter (melted). Mix together until moistened. Gently fold in apples.
Heat 4 cups peanut oil for frying in Dutch oven to 350℉. Using a large serving spoon, heap portions of batter into hot oil. Press batter lightly with the back of spoon to flatten. Fry fritters two to three at a time, keeping oil temperature between 325-350℉. Cook until a deep golden brown, about 1-2 minutes per side until cooked through. Transfer fritters to wire rack. Repeat for remaining batter.
Make the Glaze
In a medium sized bowl, whisk together 2 cups powdered sugar, 1/4 cup apple cider, 1/2 teaspoon ground cinnamon, and 1/4 teaspoon ground nutmeg. Dip fritters in glaze or spoon over fritters while still warm. Makes 8-12 fritters.
