Gather your ingredients so that you have everything close at hand on the counter or table. Using a handheld grater, shred 1 1/2 cups Monterey Jack cheese.
Brown 1 pound ground sausage in a large skillet. If necessary, drain on plate with paper towel and set aside.
Prepare the Egg Mixture
In a medium bowl, whisk together 10 large eggs and 2 tablespoons dried minced onion. If desired, you may add in 1 tablespoon dried parsley.
Pour the egg mixture into the hot skillet and cook until eggs are cooked through. Add the browned sausage to mixture and stir to combine. Sprinkle the top with the shredded cheese. Remove from heat and allow the cheese to melt on top.
Assemble the Breakfast Burritos
Heat 8 pieces flour tortillas in a microwave for 1-2 minutes to warm.
To assemble the burritos, place about a cup of the egg mixture on a warmed flour tortilla, and roll it up like a burrito. You may serve with salsa or hot sauce. This recipe will serve 4-6 people.
