Gather the ingredients so that you have everything close at hand on the counter or table.
Prepare the Pancake Batter
Place 1 1/4 cups all-purpose flour, 2 tablespoons cornstarch , 1 1/2 tablespoons baking powder, 1 tablespoon granulated sugar, and 1/4 teaspoon salt in a medium bowl. Whisk together to combine.
A batter bowl works perfectly for this.
Create a hole in the center and add in 1 1/4 cups whole milk, 1 large egg, and 1 teaspoon vanilla extract. Whisk the liquids together with a fork and then gradually mix into the flour until mostly combined. You don’t want to overmix the batter.
Last, add in 3 tablespoons butter (melted), stirring just to combine.
Cook on hot buttered skillet over medium-low heat until bubbles begin to form on batter. Turn when golden brown. Continue cooking until both sides are golden brown. Place pancakes on a serving plate and keep warm in oven. Repeat until all batter is used.
Serve warm pancakes with butter and approximately 1 cup maple syrup. Makes 6-8 pancakes.
