Crispy Italian Pizzelle Cookies
Here's a recipe for Italian Sugar Cookies that are round, thin, and flat and made with a special Pizzelle iron (kind of like a waffle iron). Perfect with a cup of tea or coffee.

Ingredients
- 1/2 cup butter melted
- 3 large eggs
- 3/4 cups granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon Princess Flavoring Emulsion Buy Here
- 1 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Gather your ingredients so that you have everything close at hand on the counter or table.
- In a microwave-safe bowl, melt butter. Allow to return to room temperature.
Prepare the Cookie Dough
- In a large bowl, whisk eggs until golden and creamy. (You may mix this by hand or by mixer with a beater.)
- Add in granulated sugar and whisk together until smooth.
- Whisk in vanilla extract, Princess Flavoring Emulsion, and melted butter to blend.
- In a small bowl, mix together the all-purpose flour, baking powder, and salt.
- Gradually add flour mixture to butter mixture to incorporate.
Make the Cookies
- Heat pizzelle maker according to manufacturers directions.
- Spoon a large tablespoon of dough onto a hot pizzelle maker. Close the lid and cook for 35-50 seconds, depending on how dark and crispy you like them.
- Using a fork, remove from hot iron and place cookies on a large baking sheet to cool. Sprinkle with powdered sugar.
- Repeat until all of the cookie batter is gone. Makes 20-24 cookies.
