Holiday Spice Pancakes are a nice change of pace for a Christmas breakfast, loaded with spice and some applesauce, which keeps them moist and delicious.
Gather your ingredients so that you have everything close at hand on the counter or table. To make this recipe you'll need a large mixing bowl or batter bowl, a spatula for mixing and one for turning the pancakes, and a griddle.
Prepare the Batter
In a medium-sized bowl, mix together the all-purpose flour, granulated sugar, baking powder, salt, cinnamon, ginger, nutmeg, and ground cloves. Wisk to incorporate.
Create a well in the center of the flour. Add in whole milk, vegetable oil, large eggs, and vanilla extract. Mix together with a wooden spoon or rubber spatula.

Using a rubber spatula, fold in the applesauce. The batter will be lumpy.

Cook the Pancakes
Heat a large griddle over medium heat and spread melted butter over it. Using about 1/3 cup per pancake, cook 2-3 pancakes at a time. Turn over when bubbles appear in the center and cook until golden brown on the other side. Repeat with remaining batter.

Serve pancakes with butter and maple syrup, or pumpkin spice maple syrup if you can find it!

This recipe will make 12-16 pancakes and will serve 6-8 people.
