These Homemade Belgian Waffles are perfect for a weekend breakfast. Of course, you may dress them up with berries and special syrups, but we enjoy them with some butter and maple syrup. Simple, tender, and delicious!

Gather the ingredients so you have everything close at hand on the counter or table. Preheat oven to 250℉.
Carefully, divide the egg yolks and whites from 2 large eggs, making sure not to get any yolk in the whites. Place the whites in a large mixing bowl, and the yolks in another bowl. Whisk the egg whites with an electric mixer until stiff.
Prepare the Batter
In a medium batter bowl, combine 2 cups all-purpose flour, 3 tablespoons granulated sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt. Form a hole in the center with a spoon.
Using a glass measuring dish, combine the egg yolks, 2 cups whole milk, 1/2 cup vegetable oil, and 1 teaspoon vanilla extract. Mix to incorporate.
Add liquids to the center of the dry ingredients, and mix with a fork or spatula just until blended.
Carefully fold in stiffly beaten egg whites with a rubber spatula. Do not overmix.
Pour about 1/2 cup of batter in a preheated waffle baker, and cook as directed by the appliance instructions.
Place cooked waffles on a baking sheet and keep warm in preheated oven until ready to serve. Serve waffles with butter and your favorite maple syrup.
