Gather the ingredients so you have everything close at hand on the counter or table. Shred the smoked salmon with a fork. Thinly slice the English cucumbers.
Prepare the Mousse
In a large mixing bowl, beat the cream cheese until smooth.
Add sour cream, lemon juice, dried minced onion, dill weed, horseradish, garlic powder, kosher salt and freshly ground black pepper. Mix well to combine.
Gently stir in the shredded smoked salmon and capers. Cover and chill until ready to serve.
Make the Sandwiches or Canapés
To make the open-faced sandwiches or canapés, first prepare the bread by buttering one side of each piece.
Remove the crusts with a sharp knife and then quarter each piece. (You may also slice into thirds to make oblong fingers, or rounds using a biscuit cutter.)
Spread the salmon mousse on the buttered sides of bread.
Top with thinly sliced cucumbers. If desired, garnish with fresh parsley or other herbs.
This recipe will make 30-40 open-faced sandwiches, and will serve 15-20 people.
Notes
*If desired, you may place another piece of bread on top of the cucumber to create a closed sandwich. If you choose this style, you will need an additional 10 slices of bread. Remove the crusts and slice the sandwiches after putting them together. **Unless otherwise indicated, all butter on this site is salted.
