Gather the ingredients so you have everything close by on the counter or table.
Prepare the Cheese
Using a handheld grater, grate 8 oz mozzarella cheese. With a fine-edged zester, grate 1/2 cup Parmesan cheese. Set aside until ready to use.
Make the Dough
In a large mixing bowl, combine 2 1/2 cups all-purpose flour, 1 tablespoon instant yeast, 1 tablespoon granulated sugar, and 1 1/2 teaspoons kosher salt. Measure out 1 cup warm water and add in 2 tablespoons olive oil. Stir the water and oil mixture into the flour until combined.
Knead by dough hook or hand until dough forms a ball, about 5-7 minutes. Let rest for 10 minutes.
Assemble the Bread Sticks
Preheat oven to 350°F. On a lightly floured surface, roll dough out into a 12″ x 15″ rectangle. Transfer dough to a greased sheet pan, or a sheet pan lined with parchment paper. Drizzle remaining 2 tablespoons olive oil on surface, spreading to edges.
Sprinkle the top with 1 tablespoon garlic powder, grated Mozzarella cheese, and 1 tablespoon dried parsleyor chives. Cover and allow dough to rise for 30 minutes.
Bake in preheated oven (convection, if possible) for 18-20 minutes until golden brown. Remove from oven and allow to set for 10 minutes.
Transfer the bread to a cutting board. Slice down the center of the bread, then cut into 2" slices.
To serve, place bread sticks on a pretty platter, and sprinkle with finely grated Parmesan. Makes 14-16 bread sticks and will serve 8-10 people.
