Cheesy Bread Sticks is made from an old pizza dough recipe. It’s soft with a hint of sweetness, then loaded with gooey mozzarella cheese. Salty garlic powder. Sweet and tasty parsley or chives. I’m drooling, just thinking about them.

Instructions For Making This Recipe

Gather the ingredients so you have everything close at hand on the counter or table.
Prepare the Cheese
Using a handheld grater, grate the mozzarella cheese. With a fine-edged zester, grate the Parmesan cheese. Set aside until ready to use.
Make the Dough


In a large mixing bowl, combine all-purpose flour, instant yeast, granulated sugar, and kosher salt. Measure out the warm water and add in 2 tablespoons extra virgin olive oil. Stir the water and oil mixture into the flour until combined.


Knead by dough hook or hand until dough forms a ball, about 5-7 minutes. Let rest for 10 minutes.
I have found that with this recipe, hand kneading produces a very tender bread stick if you are up for the extra work!
On a lightly floured surface, roll dough out into a 12″ x 15″ rectangle. Transfer dough to a greased sheet pan, or a sheet pan lined with parchment paper. Drizzle remaining olive oil on surface, spreading to edges.
Assemble the Bread Sticks


Sprinkle the top with garlic powder, grated Mozzarella cheese, and dried parsley or chives. Cover and allow dough to rise for 30 minutes. Preheat oven to 350°F.


Bake in a preheated oven (convection if you have that option) for 18-20 minutes until golden brown. Transfer to a cutting board, and cut dough in half horizontally, then into into 2″ finger slices.

Transfer bread sticks to a pretty serving platter, and sprinkle with freshly grated Parmesan. This recipe will make 14-16 slices and will serve 8-10 people.
