Serve this Fresh Fruit Cocktail Salad for your next Sunday brunch, family gathering, or potluck dinner. Everybody loves fruit, and this fresh fruit salad is a winner. It's coated in a citrus dressing so your fruits won't turn color on you, which is also very nice.
Gather all your ingredients so that you have everything close at hand on the counter or table.
Prepare the Fruit
Rinse all of the fresh fruit and drain in a colander. As each fruit is prepared, place in large bowl.
Using a cutting board and sharp knife, remove tops from 1 quart fresh strawberries and slice in half. Slice 1 whole fresh pineapple (or drain canned pineapple chunks) Reserve any juice for the dressing. Slice 10 oz red grapes in half. Peel and chop 3 whole kiwi into chunks. Remove peel and section 3 whole mandarin oranges (or drain canned mandarins). Peel and slice 2 large bananas.
Add 12 oz fresh blackberries and 1 pint fresh blueberries (rinsed) to the rest of the fruit in the bowl.
Prepare the Citrus Dressing
Zest one lemon, enough to make 2 teaspoons lemon zest. Using a citrus juicer, squeeze the juice from the lemon, for 2 tablespoons lemon juice.
In a small bowl, combine 1/4 cup honey, the lemon zest, the freshly squeezed lemon juice, and the reserved pineapple juice. Whisk to mix well.
Pour the dressing over the fresh fruit. Gently toss to coat. Place fruit in a pretty serving bowl. Serves 8-10.
Notes
*If you are using fresh pineapple, you may substitute orange juice for the pineapple juice.
