Gather your ingredients so that you have everything close at hand on the counter or table. Prepare your ingredients. Using a knife a cutting board, mince the cloves of garlic. With a fine-edge grater, zest a lemon.
Making the Chili Sauce Marinade
In a large bowl, combine the minced garlic, chili sauce, extra-virgin olive oil, freshly grated lemon zest, kosher salt and freshly ground black pepper. Whisk until mixed well.
Add chicken thighs and stir to coat. Allow to marinate for 10-15 minutes.
While chicken marinates, prepare a gas or charcoal grill for cooking.
Place the chicken thighs on the hot grill. Grill the chicken, flipping once or twice until cooked through (175 degrees) for about 17-20 minutes total. Brush with chili sauce as desired during cooking. Serves 4-6.
