Gather ingredients for this recipe so you have everything close at hand on the counter or table.
Prepare the Dough
In a large mixing bowl, combine 1 cup lukewarm water, 1/3 cup butter, 1 large egg, 1/4 cup granulated sugar, 1 tablespoon dried minced onion, 1 tablespoon instant yeast, 1 teaspoon kosher salt.
Stir in 1 cup wheat flour. Add 2 1/2 cups all-purpose flour to form a ball. Knead with electric mixer using a dough hook for 5-6 minutes, until dough is soft and smooth.
Place in greased bowl, and cover with plastic wrap. Allow to rise for 60-90 minutes until double in bulk.
Shape and Rise
Preheat oven to 375°F. Once the dough has doubled, gently punch down and divide it into ten to twelve equal pieces.
Shape each into a round ball, then gently flatten out to form a bun that is about the size of a hamburger patty (approximately 4 1/2 inches wide). Place on baking sheets that have been lined with parchment paper or silicone baking sheets. Cover with a clean tea towel and allow to rise for 20-30 minutes while oven is preheating.
Prepare the Egg Wash
To make egg wash, whisk 1 small egg and 2 tablespoons water in a small bowl and brush over the tops of each bun. Sprinkle 4 tablespoons sesame seeds or Everything Bagel seasoning over the tops.
Bake in preheated oven for 15-17 minutes until golden brown. Bread is done when center reaches 190°F.
Transfer the buns to a wire rack to cool. When ready to serve, slice the buns in half with a sharp bread knife. This recipe makes 10-12 buns.

You may freeze for up to 4 weeks. To thaw, remove from freezer and allow buns to come to room temperature before opening the freezer bag.
