I first made this recipe for Whole Wheat Onion Hamburger Buns several years ago. And wow, I always say I may never go back to buying buns from the grocery store ever again! (Of course, I do, because I’m human and buying buns is easy, right?) But these homemade hamburger buns are really delicious and easy to make. And so pretty.

From start to finish they take less than 2 1/2 hours to make, and will produce 10-12 lovely buns. So if you have the time, go ahead and try this recipe! If you don’t care for onion, you may simply omit it from the recipe, although I think it makes a burger taste even better!

Instructions for Making This Recipe

Gather ingredients for this recipe so you have everything close at hand on the counter or table.

Prepare the Dough

In a large mixing bowl, combine warm water, butter, large egg, granulated sugar, dried minced onion, kosher salt, and instant yeast.

Stir in whole wheat flour. Add all-purpose flour to form a ball. Knead with electric mixer using a dough hook for 5-6 minutes, until dough is soft and smooth.

Alternately, you may knead by hand on a lightly floured surface for the same amount of time, until you have a nice smooth ball of dough.

Place in greased bowl, and cover with plastic wrap. Allow to rise for 60-90 minutes until double in bulk.

Shape and Rise

Preheat oven to 375°F. Once the dough has doubled, gently punch down and divide it into ten to twelve equal pieces.

After making this recipe several times, I believe 11 or 12 work best, without making the buns too large and bready for your burger.

Shape each into a round ball, then gently flatten out to form a bun that is about the size of a hamburger patty (approximately 4 1/2 inches wide). Place on baking sheets that have been lined with parchment paper or silicone baking sheets. Cover with a clean tea towel and allow to rise for 20-30 minutes while oven is preheating.

Prepare the Egg Wash

After Buns have Risen, Brush with Egg Wash and Sprinkle with Toppings

To make egg wash, whisk a small egg and 2 tablespoons water in a small bowl and brush over the tops of each bun. Sprinkle each with sesame seeds or Everything Bagel seasoning. Either are delicious.

Bake in preheated oven for 15-17 minutes until golden brown. For the most tender buns, try not to bake them longer than this.

Transfer the buns to a wire rack to cool. When ready to serve, slice the buns in half with a sharp bread knife. This recipe makes 10-12 buns.

Store buns in tightly covered container or freezer bag at room temperature for up to 3 days. You may freeze for up to 4 weeks. To thaw, remove from freezer and allow buns to come to room temperature before opening the freezer bag. 

Serving Suggestions

Serve Whole Wheat Onion Hamburger Buns with Grilled Burgers, Sloppy Joes, or Slow-Cooked Barbecued Pork. If desired, you may toast the inside of the buns by spreading butter on them and cooking them on a griddle or skillet.
