Gather your ingredients so that you have everything close at hand on the counter or table.
Make the Pancake Batter
In a large batter bowl, mix together 2 cups all-purpose flour, 2 tablespoons baking powder, 1 tablespoon brown sugar, 1 teaspoon salt, 1 teaspoon ground cinnamon and 1/4 teaspoon nutmeg (freshly grated).
Forming a well in the center of the flour mixture, pour in 1 cup apple cider, 1/2 cup sweetened applesauce, 1/2 cup whole milk, 2 large eggs, 3 tablespoons melted butter, and 1 teaspoon vanilla extract. Stir together and mix into the flour ingredients until combined.
Heat a large griddle over medium heat and spread melted butter over it. Using about 1/3 cup per pancake, cook 2-3 pancakes at a time. Turn over when bubbles appear in the center and cook until golden on the other side. Repeat with remaining batter.
Serve immediately. Serve with butter, maple syrup, eggs, and bacon, if desired. Serves 4-6.
