I like serving these pancakes with Maple syrup, bacon, and eggs. They are always a hit in our house.

I Love Baking With Fresh Apple Cider

Every year my dad makes his own cider by squeezing the juice from fresh fall apples or pears with his cider press. I’m always on the lookout for ways to use the cider he gives us, and this recipe is a perfect fit.

If you don’t have access to someone with an apple press, take time to visit an apple orchard, such as Louisburg Cider Mill, in Louisburg, KS. With fresh apple cider, you get the fresh juice of apples, which I think, is much stronger than the cider you buy in the store. If you have a chance to buy fresh cider, please give it a try!

Begin by gathering all your ingredients on the counter or table.

Whisk Together the Dry Ingredients - Use Freshly Grated Nutmeg if Possible

In a large bowl, mix together the all-purpose flour, baking powder, brown sugar, salt, ground cinnamon, and freshly grated nutmeg.

If possible, use freshly ground nutmeg for the best flavor!

Forming a well in the center of the flour mixture, pour in apple cider, applesauce, whole milk, large eggs, melted butter, and vanilla extract. Stir together and mix into the flour ingredients until combined.

This is a great recipe to have your children (or grandchildren) help with. Teach them how to measure, dump, and stir. Great teaching moments! 

Heat Griddle until it Sizzles - Cook Pancakes in Melted Butter

Heat a large griddle over medium heat and spread melted butter over it. Using about 1/3 cup per pancake, cook 2-3 pancakes at a time. Turn over when bubbles appear in the center and cook until golden on the other side. Repeat with remaining batter.

Serve Apple Cider Pancakes with English Walnuts

Serve immediately. Serve with butter, maple syrup, bacon, and my Glazed English Walnuts, if desired.

  • 2 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg (freshly ground)
  • 1 cup apple cider
  • 1/2 cup sweetened applesauce (chunky)
  • 1/2 cup whole milk
  • 2 large eggs
  • 3 tablespoons melted butter
  • 1 teaspoon vanilla extract
