As mentioned before on this site, I love frozen pies. When I was a girl, (early 70’s) my mom purchased frozen pies, and my brothers and I thought they were the cat’s meow! I think they were lemon and lime, and they had this lovely frozen whipped topping decorated around the outer edges. So good.
One summer I decided to try my hand at frozen pies to create what I remembered from my childhood. This one hit the target with a bull’s-eye.
Sweet. Tart. Pretty. Cool. Refreshing. And it’s easy to make.
Ingredients Needed to Make Key Lime Pie
For the Crust:
graham crackers
sugar
butter
For the Filling:
sweetened condensed milk
lime juice
unsweetened Kool Aid lemon-lime soft drink packet
tub frozen whipped topping
Instructions
You’ll want to begin by making your graham cracker crust. Of course, you may opt to purchase one that is already made. Your choice. But this homemade version is quite tasty and easy to make.
When crushing your graham crackers, I like to put the squares inside a freezer bag. Zip it up, squeezing the excess air out as you do. Then take your rolling pin and crush the crackers. Roll it back and forth, over and over until the crackers are fine crumbs. One sleeve will make the equivalent of 1 1/4 cups of crumbs.
In a medium mixing bowl, mix together the graham cracker crumbs, sugar, and melted butter with a fork until combined. Press into pie plate and refrigerate.
To make the filling, in a large mixing bowl, combine sweetened condensed milk, lime juice and soft drink mix.
Mix half of the whipped topping with the lime mixture, mixing well. Pour the filling into the prepared crust.
With an icing tip, add remaining whipped topping as a garnish on top of the lime mixture. Cover the pie with a pie plate topper and freeze for six hours or overnight. This recipe will serve at least 8.
Remove the frozen pie from the freezer at least ten minutes before serving to make slicing and serving easier.
