Decorated Key Lime Pie Ready for Freezing

(Post modified with new photos on 8/22/23.)

As mentioned before on this site, I love frozen pies. When I was a girl, (early 70’s) my mom purchased frozen pies, and my brothers and I thought they were the cat’s meow! I think they were lemon chiffon and key lime, and they had this lovely frozen whipped topping decorated around the outer edges. So yummy.

A few years ago, I decided to try my hand at frozen pies to create what I remembered from my childhood. This one hit the target with a bull’s-eye.

Sweet. Tart. Pretty. Cool. Refreshing. And it’s easy to make.

Instructions for Making This Recipe

Ingredients for this Recipe

To begin, gather your ingredients so that you have everything close at hand on the counter or table.

You’ll want to begin by making your graham cracker crust. Of course, you may opt to purchase one that is already made. Your choice. But this homemade version is quite tasty and easy to make.

Crush the Graham Crackers with a Rolling Pin

When crushing graham crackers, I like to put the squares inside a quart freezer bag. Zip it up, squeezing the excess air out as you do. Then take your rolling pin and crush the crackers. Roll it back and forth, over and over until the crackers are fine crumbs. One sleeve will make the equivalent of 1 1/4 cups of crumbs.

Add Melted Butter to the Crushed Crackers and Granulated Sugar

In a medium mixing bowl, mix together the graham cracker crumbs, sugar, and melted butter with a fork until combined.

A Completed Graham Cracker Crust

Press into pie plate and refrigerate.

Prepare the Filling

To make the filling, in a large mixing bowl, combine sweetened condensed milk, lime juice and lemon-lime drink mix.

Mix Half of Whipped Topping into the Filling

Mix half of the whipped topping with the lime mixture, mixing well. Pour the filling into the prepared crust.

Pipe Remaining Whipped Topping Around Edges of Pie

With an icing tip, add remaining whipped topping as a garnish on top of the lime mixture. Cover the pie with a pie plate topper and freeze for six hours or overnight.

Remove the frozen pie from the freezer at least ten minutes before serving to make slicing and serving easier. This recipe will serve at least 8.
