I love to make Easy Company Potatoes for family gatherings or church socials. It makes a lot and goes well with Country-Style Ribs or Holiday Ham.

And it’s one of those “dump” recipes, so it’s easy to put together. 

Ingredients Needed to Make Easy Company Potatoes

  • cream of chicken soup
  • sour cream
  • cheddar cheese
  • butter
  • dried minced onion
  • kosher salt
  • freshly ground black pepper
  • frozen southern hash browns
  • Italian style bread crumbs

A Few Notes Regarding Ingredients

In the past if I don’t have any cream of chicken soup in the pantry, I’ll substitute cream of celery or cream of mushroom soups. Any of them work well in this recipe.

As I always say, buy your cheese in block form and shred it at home. Sure, it’s an added step, but it doesn’t take long to shred it yourself. Bulk cheese melts better, costs less per ounce, and it just tastes better.

If you don’t have cheddar cheese, you may also use Colby, or Colby Jack.

Regarding hash browns, I like to use the cubed kind, and also the Southern Style (with chopped peppers and onions) if I can find it to give the dish a pop of color.

And finally, we come to the finishing notes. The topping. In the past I’ve used different ingredients–crushed cornflakes, dried fried onions, and Italian style bread crumbs. I prefer the latter two options, with bread crumbs as my top choice. But use what you have available in your pantry. The fried onions give the dish a little more flavor zest, but the Italian bread crumbs give the topping a bit more color because of the additional herbs. It’s your choice. If you’re wild about fried onions, use them.

Instructions for Making this Recipes

Preheat oven to 350 degrees. In a large bowl, combine cream of chicken soup, sour cream, cheddar cheese, butter, dried minced onion, salt, and black pepper. Using a long handled wooden spoon, stir in the frozen hash browns until thoroughly combined.

Spoon into an oblong or oval baking dish sprayed with cooking spray. Sprinkle the Italian style bread crumbs over the top of the casserole.

Bake in preheated oven for 45-60 minutes until cheese is bubbly and lightly browned. This recipe will serve 10-12 people.

Ingredients

  • 10 3/4 oz. cream of chicken soup
  • 2 cups sour cream
  • 2 cups cheddar cheese shredded
  • 1/2 cup butter melted
  • 2 tablespoons dried minced onion
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 pounds frozen southern hash browns cubed type
  • 1 cup Italian Style Bread Crumbs

Instructions

  • Preheat oven to 350 degrees. Spray an oblong or oval baking dish with baking spray. Grate your cheese.
  • In a large bowl, combine cream of chicken soup, sour cream, grated cheddar cheese, melted butter, onion, salt, and pepper. Stir in the frozen hash browns until thoroughly mixed.
  • Spoon into prepared baking dish. Sprinkle bread crumbs over the potato mixture. Bake in preheated oven for 45-60 minutes until cheese is bubbly and lightly browned. Serves 8-10.
