I’ve been working with sourdough since 2013, and after all this time, I’m still finding new recipes to enjoy both with active sourdough and “unfed” or sourdough discard. Below are some of our family’s Favorite Sourdough Discard Recipes.
If you are new to sourdough, there are two types of recipes for sourdough. 1) fed or active recipes; and 2) unfed or discard recipes. Both are wonderful to work with, but for this post, I’m concentrating on the latter of the two.
“Unfed” starter is what some people call the “discard”. This dough has been sitting in the fridge or on the counter unused and has not been fed. So, rather than throw out or “discard” the “unfed” starter, you can use it in what I call quick bread recipes, such as muffins, pancakes, biscuits, etc. The “unfed” starter is used for imparting its flavor, rather than its leavening power.

Sourdough Cheddar Cheese Crackers
This recipe for Sourdough Cheddar Cheese Crackers is so delicious and a great way to use “unfed” sourdough starter. Lightly flavored with Vermont Cheddar Cheese Powder and sourdough, the combination brings a smile to my little grandson’s face.
Crunchy Sourdough Breadsticks, also known as Italian Grissini, are wonderful with salads, soups, or even as an appetizer or snack. It’s a great way to use up your sourdough discard, too.
This recipe makes a yummy appetizer and is perfect for a potluck dinner. Or maybe even a wine and cheese tasting party. It’s easy to make and is a great way to use your sourdough starter, something I’m always on the lookout for.
Sourdough Whole Wheat Bagels can actually be made with both “active” sourdough or “unfed” sourdough. I've made them both ways, so I'm including them here for you to decide.
