These Homemade Egg Noodles are the perfect companion for Chicken and Noodles or Beef and Noodles. Tender noodles cooked in a creamy, buttery gravy. So good!

Sure you could use frozen egg noodles. I sometimes do and prefer Reames Homemade Egg Noodles.

But if you really want to wow your family or company, try making some from scratch. Although it takes a while for them to dry, they are really quite simple to make. And so very delicious.

Ingredients to Make Homemade Egg Noodles

  • all-purpose flour
  • salt
  • butter
  • large eggs
  • whole milk

 

Instructions for Making this Recipe

Ingredients for Homemade Egg Noodles

Gather your ingredients so that you have everything close at hand on the counter or table.

 

Prepare the Dough

In a small bowl, combine the all-purpose flour and salt. Using a blending fork or your fingers, stir in bits of butter.

Add large eggs and egg yolk together with whole milk. Mix together with fork until it comes together in a ball.

Use your hands to knead dough 3-5 minutes until smooth. Your dough should come together and be smooth and elastic. Let the dough rest for about 10 minutes.

 

Make the Noodles

Rolling Out the Dough

On a floured surface, roll out dough with a rolling pin to 1/4 – 1/8″ thick. Be sure to have plenty of flour on the bottom and top of the dough to help prevent sticking.

Cut Noodles with a Pasta Roller

To cut, use one of two methods. 1) Use a pasta roller-cutter to cut your noodles. 

Roll the Dough and Slice

Or 2) try an old method my mom taught me. Generously flour the dough on the bottom and top. Loosely roll the dough beginning with one long edge and working up (like for a cinnamon roll.) Then using a sharp knife slice the roll into 1/2″ widths.

Unroll each slice and then either slice or pull off pieces to desired lengths of noodles. Spread out on a floured surface so that slices do not touch each other.

 

Recipe for Homemade Egg Noodles

Allow noodles to air dry for 2-3 hours. At that point they will be ready to cook or you can put them in a plastic bag and freeze for later use.

Cooking Homemade Egg Noodles in BrothWhen ready to prepare, cook in a pot of boiling broth for 10-12 minutes until tender. Use the extra flour with the noodles, which will help thicken the gravy. This recipe will serve 6-8 people.

  • 2 1/2 cups all-purpose flour
  • 2 teaspoons salt
  • 1 tablespoon butter
  • 2 whole eggs + 1 egg yolk
  • 1/2 cup whole milk

Instructions

  • Cook in boiling broth for 10-12 minutes until tender. Serves 6-8.
