Bacon Wrapped Little Smokies Are a Delightful Addition to a Holiday Table!

The first time I ever tried one of these delightful bites was at a holiday tea party many years ago when my husband’s Aunt Ruth brought them for our table. Everyone enjoyed the little cocktail sausages, and they are still a favorite today.

This recipe makes a delicious savory treat for any holiday table, plus it’s fun to involve kids in the assembly of the sausages.

Preheat oven to 375°F, using a convection setting, if possible. Gather the ingredients so you have everything close at hand on the counter or table.

Slice the Bacon

Using a sharp knife and a cutting board, slice the bacon in thirds or quarters, depending on the length of the bacon. I used about 15 pieces of bacon and sliced them in quarters.

I used regular bacon for this recipe (not thick sliced bacon), to ensure better browning of the bacon.

Prepare the Brown Sugar Mixture

Mix Together Brown Sugar, Smoked Paprika and Onion Powder

Place brown sugar in a small bowl, and stir in smoked paprika and onion powder. Mix well to combine.

Assemble the Little Smokies

Stretch and Wrap Bacon Pieces Around Smokies and Insert a Toothpick to Seal

When ready to assemble the Little Smokies, you’ll need toothpicks and a baking sheet lined with aluminum foil, and coated with baking spray to aid in easy release once the smokies are baked.

Stretch and wrap a piece of bacon around each cocktail sausage, and attach with a toothpick inserted in the center. Place seam-side down on the baking sheet, about 1/2″ apart. Repeat with remaining smokies, which will nearly fill the baking sheet.

Because I had sliced the bacon into quarters, it helped to stretch the bacon a bit before I wrapped it around the Lit’l Smokie. If you are using longer pieces of bacon, this probably won’t be necessary.

Generously Sprinkle Brown Sugar Mixture over the Bacon Wrapped Smokies
Bake Until Bacon is Cooked to Desired Doneness

Using a spoon or your fingers, generously sprinkle the brown sugar mixture over the Lit’l Smokies. Place the baking sheet in preheated convection oven and bake for 15-20 minutes until the bacon has cooked to your desired doneness.

When baking the Lit’l Smokies, I used a convection setting to help brown the bacon. If you are unable to use convection heating, you may need to cook the bacon for an additional 5-7 minutes.

Be sure to remove the smokies from the pan once they have cooked, or they will stick to the hardened sugar, and you will have to peel them from the pan. Ask me how I know!

Serve Bacon Wrapped Little Smokies at a Tea Party or as Appetizers

Serve Bacon Wrapped Little Smokies warm or at room temperature. This recipe will make approximately 55 pieces, and will serve 12-15 people.

Refrigerate leftovers in a covered container for up to 5 days. To reheat, you may place them in a microwave for a few minutes, or warm in a 300°F oven for 8-10 minutes.

  • 24 oz Beef Lit’l Smokies
  • 14 pieces bacon (not thick sliced)
  • 1 cup brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder

Place the baking sheet in preheated "convection" oven and bake for 15-20 minutes until the bacon has cooked to your desired doneness.
