This delicious recipe for Strawberry Cake uses a cake mix as the base, and is so easy to make. If desired, you may switch out the strawberry ingredients for raspberry, which is also very yummy. This sheet cake works great for potluck dinners or family gatherings.


A Wedding Cake from a Cake Mix
I first tasted this cake at my wedding! My mother-in-law (to be) made our wedding cake, which was a three-tiered strawberry and vanilla cake, with a chocolate groom’s cake by its side.
It was so delicious! I recall my surprise when I learned it came from a cake mix. It was so moist. So flavorful. How could something so wonderful come from a cake mix?
My mother-in-law’s reply: “Why, it’s a doctored cake mix, of course.” Well, that explains it.

We’ve since made this cake for more weddings, bridal showers and even a baby shower. I think one of my favorite parts is the icing. Yummy, sweet, and full of little pieces of strawberries.
Ingredients for Strawberry Cake

Instructions for Making This Recipe

Preheat oven to 350°F. Gather all your ingredients so that you have everything close at hand on the counter or table.
Prepare the Ingredients
Using a potato masher or a blending fork, mash the frozen strawberries. With a food processor or blender, puree enough frozen strawberries for the frosting, about 1/2 cup. Set aside until ready to use.
You may use fresh strawberries, but I prefer using frozen strawberries as they seem to mash and break down a little better than fresh berries.
Make the Cake Batter
In a large mixing bowl, mix together on low speed the white cake mix, strawberry gelatin, large eggs, vegetable oil, and buttermilk until combined, about 1 minute. Mix an additional 3 minutes on medium speed.
Using a rubber spatula, fold in mashed strawberries until combined.
Pour the cake batter into a greased oblong cake pan, spreading to edges. Tap pan once to remove bubbles.
Bake in preheated oven for 30-35 minutes until cake springs back in center when touched. Allow to cool.
Prepare the Frosting
To prepare the strawberry frosting, combine powdered sugar, pureed strawberries, and softened butter in a medium bowl. Beat together until smooth and creamy.

Spread on cooled cake. While it’s not necessary, I like this cake best after it has been refrigerated. So, if possible, cover and refrigerate for at least 90 minutes before serving.
This cake will serve 15-18 people.

A Few Tips
When making this cake, remember to use softened butter. Real butter.
As for cake mixes, be sure to choose one that includes pudding in the mix. I like Betty Crocker, but Duncan Hines works well, too.
You may use fresh or frozen strawberries. We usually use frozen. I think they mash better, which works best for this recipe.

Sheet cakes are easy and quick to prepare, but if you’d prefer to make a layer cake, that’s fine. There should be plenty of icing for that. The baking time might be a smidge shorter, however. I hope you’ll enjoy this recipe as much as we do!
