My husband loves Country Pancakes. So tasty you can eat them as a snack. And tender enough to soak in thick maple syrup. But not so fluffy that they fall apart. Truly wonderful.
I used to make my husband cornbread pancakes using Jiffy Cornbread mix. And they were really yummy, but they fell apart too easily. This is my homemade version of that mix, only much better!
