Banana Scones are a wonderful addition to a weekend brunch.

Our daughters and I love scones, whether they are the big breakfast type you find in coffee shops here in the US, or the smaller round scones served at tea parties. Both types are delightful and well worth making at home.

Be sure to include your kids or grandchildren when making scones, as they love being involved in the kitchen!

Sometimes, I like to bake breakfast scones in a scone pan that I purchased years ao made by Nordic Ware. They also sell a smaller scone pan, which would be nice when serving a large brunch.

Instructions For Making This Recipe

Preheat oven to 400°F. Gather the ingredients so you have everything close at hand on the counter or table. Spray scone pan with baking spray or lightly grease with shortening.

Prepare the Ingredients

In a small bowl, mash the banana(s) using a blending fork or kitchen fork. You will need 1 large or 2 medium-sized bananas to make 1 cup.

When baking with bananas, I always try to use ripe produce, which are easy to mash. You may even freeze ripe bananas for use in such recipes by placing peeled bananas in a quart freezer bag or container. To use, simply thaw the frozen bananas in the refrigerator and use as directed.

Chop the pecans on a cutting board with a knife or use a nut chopper.

I prefer chopped pecans in this recipe, but English walnuts or even black walnuts are nice, depending on your taste preference or ingredients you have in the pantry.

Make the Dough

In a medium bowl, mix together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Cut in cold butter with a pastry fork or kitchen fork until the flour is crumbly like sand.

Add in the mashed bananas, half and half cream, large egg, and vanilla extract. Stir into flour mixture adding the chopped pecans as the dough thickens. This dough tends to be rather soft and gooey.

Form And Bake The Scones

To form the scones, divide the dough into 8 portions and scoop each into the scone pan. Press the dough to form along the sides of the pan.

If your dough is not too soft, you may alternately pat it into a round disc on a lightly floured surface and cut the dough into 8 triangles. I usually find this method too messy.

If desired, top the scones with a few larger pieces of chopped pecans for a nice visual effect. Sprinkle with sparkling decorating sugar.

Bake in preheated oven for 20-25 minutes until golden brown. Remove from oven and allow the scones to cool for 5-8 minutes before transferring the scones to a wire rack to cool completely. This recipe will serve 8 people.

Serving Suggestions

Serve scones with coffee or for a weekend brunch. These Banana Nut Scones go well with egg casseroles such as Breakfast Quiche, Ham and Hash Brown Egg Casserole, or Weekend Brunch Casserole.
