White Chocolate Cherry Cookies

These White Chocolate Cherry Cookies are perfect for spring, special occasions or even for Valentine’s Day!
They are always a hit when I make them. Full of delicious white chocolate pieces and chopped dried cherries, plus chunks of sliced almonds. Yum!

Ingredients to Make White Chocolate Cherry Cookies

- butter, room temperature
- light brown sugar
- granulated sugar
- large eggs
- vanilla extract
- all-purpose flour
- salt
- baking soda
- dried dark cherries, chopped
- white chocolate chips (I love Ghirardelli)
- sliced almonds
A Note About Ingredients
When buying white chocolate, I like to shop for the best that I can afford. Ghirardelli makes lovely chips, as does Nestle Toll House.
If you’ve never purchased dried cherries, I encourage you to do so. I love them in scones, and especially in these cookies. They are also very yummy in my Chewy Granola Bars! I like to buy they at our nearest Aldi store, or Walmart also carries them. Or if you’re very ambitious, try drying your own! See Recipes with Dried Cherries Here.
As for nuts, I usually make these cookies with sliced almonds, which I always have in my cupboard. On occasion, I’ve used chopped macadamia nuts, which are very delicious and escalate these cookies to another bar level of scrumptiousness!
Instructions for Making This Recipe
Preheat oven to 350 degrees. Gather all your ingredients so that you have everything close at hand on the counter or table.
Prepare your ingredients. Using a bench knife chop the dried cherries into small pieces.
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar. Mix until light and fluffy.
Add large eggs and vanilla extract. Mix well.
In a small bowl, combine the all-purpose flour, salt, and baking soda. Add to butter mixture and mix well.
Stir in chopped dried cherries, white chocolate chips, and sliced almonds to incorporate.
Drop by large tablespoons 2″ apart on baking sheets lined with parchment paper or silicone baking mats. I learned years ago from a lady in our church that large cookies bake up into bakery-style, scrumptious-looking cookies. And it’s true. Try it and see!
For a chewy cookie, bake in preheated oven for 12-14 minutes until golden brown. If a crunchier cookie is desired, baked for a few minutes more. Cool on wire racks.
This recipe will make 2-3 dozen large cookies.
