Living in Kansas, salmon isn’t high on my list of grocery foods. My husband tends to prefer beef, pork, or chicken dishes. But I’m trying to include more fish and seafood in our weekly diet. This Lemon Balsamic Glazed Salmon recipe is a quick and easy way to include more Omega-3 to your family’s diet.
Ingredients for Lemon Balsamic Glazed Salmon
- frozen salmon fillets, thawed
- extra virgin olive oil
- lemon pepper
- kosher salt
Balsamic Sauce
- orange juice
- brown sugar
- freshly squeezed lemon juice
- balsamic vinegar
- lemon zest
- cornstarch
- minced garlic
Instructions for Making This Recipe
Preheat oven to 350 degrees. Gather your ingredients so that you have everything close at hand on the counter or table.
Prepare the Ingredients
Using a fine-edge grater, zest a lemon. With a citrus juicer, squeeze the juice from one lemon. Mince the garlic.
Place the thawed salmon on a baking sheet lined with aluminum foil. Drizzle each fillet with olive oil. Sprinkle with lemon pepper and kosher salt.
Bake in preheated oven for 20-25 minutes or until the salmon flakes easily when tested with fork.
Prepare the Balsamic Sauce
Meanwhile, in a small saucepan, combine the orange juice, brown sugar, freshly squeezed lemon juice, balsamic vinegar, lemon zest, cornstarch, and minced garlic. Whisk together until cornstarch has dissolved.
Bring to a boil over medium-high heat. Cook and stir until mixture thickens. To serve, pour sauce over salmon. Serves 4.
Serve with Herbed Brown Rice and Glazed Sweet Potatoes.
