Who knew asparagus was a vegetable made for breakfast? I had never considered adding a green vegetable like asparagus to my breakfast menus until I attended a writers’ conference one year where they served asparagus at nearly every meal. I kid you not! It was the joke of the conference–the year of asparagus! But it was really good and especially complimented the egg dishes.

Serving Breakfast Quiche with Bacon-Wrapped Asparagus

I love serving this dish with quiche or an egg casserole. It adds a pop of color as well as a healthy vegetable for your breakfast table.

Ingredients for Honey Balsamic Bacon-Wrapped Asparagus

  • fresh asparagus spears
  • thick cut bacon
  • extra virgin olive oil
  • freshly ground black pepper
  • honey
  • balsamic vinegar

Instructions for Making this Recipe

Preheat oven to 400°F. Gather your ingredients so that you have everything close at hand on the counter or table. Cover a baking sheet with a piece of aluminum foil for easy clean-up later. I always spray the foil with baking spray so that the vegetables will come off without sticking.

Prepare the Ingredients

Rinse and trim the asparagus, cutting off the hard ends. You’ll need approximately 24 spears, more or less, depending on the size of the asparagus.

Divide the asparagus spears into 8 groups. This will come to 2-4 spears in each serving.

Wrap Asparagus Spears with Thick Slices of Bacon

Wrap each of the bundles with a piece of thick-cut bacon. Place each bundle of asparagus on the baking sheet, about 1-inch apart from each other. Repeat with the remaining bundles.

I like to start wrapping the bacon toward the bottom and move upward, without overlapping too much so that the bacon cooks properly. 

Using a pastry brush, smooth extra-virgin olive oil over each bundle. Sprinkle each with freshly ground black pepper.

Bake in preheated oven on a middle rack for 25-30 minutes, or until the bacon has cooked to the desired doneness. The amount of baking time will depend on the thickness of the bacon as well as how crisp you like it.



Special Tip for Cooking Bacon

Did you know that you can cook crisp, wonderfully delicious bacon in the oven for about the same amount of time that it takes to do it on the stove? With less grease and mess?

You sure can, and I love cooking bacon this way, especially when we have family over for brunch. Here’s How:

  • Preheat oven to 375°F. Line a baking sheet with aluminum foil for easy clean-up later.
  • Place pieces of thick-cut bacon on the baking sheet, fitting them snugly against each other to get as many on the pan as possible. I can get about 16-18 pieces on a pan.
  • Place on a middle rack in the preheated oven. Bake for 15-20 minutes until the bacon has cooked to your desired doneness.
  • Remove from oven and transfer bacon to a platter lined with paper towels to catch the extra grease.
  • Allow the baking sheet to cool, and then pour bacon fat into a container to save for use later. Or dispose of it along with the aluminum foil in a trash bin.

Make the Glaze

Ingredients for the Glaze

While the asparagus bundles bake, prepare the glaze mixture. In a small bowl,  combine the honey and balsamic vinegar. Heat the mixture in the microwave for 15-25 seconds so the honey is easier to mix. Whisk together until blended.

Bake until Bacon is Golden Brown and Slightly Crisp

Once the bundles have baked, brush with the honey balsamic glaze. Place on a serving plate or platter. Serve warm.

Serve on Tray or Platter
