Cheesy Ham and Rice with Broccoli is the perfect dish to make with any leftover ham you might have from the holidays. I made this recipe from items I had in my refrigerator and it was so delicious, it became a family favorite and works well after Christmas or Easter!
This dish is really a one pot meal you can prepare on the stove or in the microwave. It’s an easy recipe to make for a weeknight dinner, or when you want a little break from cooking.
Ingredients for this recipe include leftover ham, long grain white rice (which may also be leftover), cheese spread, and frozen broccoli.
While I prefer broccoli or a combination of broccoli, cauliflower, and even carrots, I’ve also used frozen mixed vegetables or peas. As I always say, use the ingredients that you have, especially for a dish like this.
Cheesy Ham and Rice may be made from start to finish in less than 40 minutes, which makes it a perfect weeknight meal for your family.

Ingredients for Cheesy Ham and Rice with Broccoli

- chicken bouillon cubes + water
- long grain white rice
- sweet onion, diced
- cheese spread (like Velveeta), divided
- shredded leftover ham
- frozen broccoli
- kosher salt
- freshly ground black pepper
Instructions for Making this Recipe
Gather the ingredients so that you have everything close at hand on the counter or table.
Prepare the Ingredients
Using a cutting board and a chef’s knife, dice the sweet onion.
In a large saucepan bring water to boil. Add chicken bouillon cubes and stir until dissolved. Stir in theĀ long grain white rice and diced sweet onion, follow cooking instructions on package, simmering on low for approximately 18-20 minutes.
While rice is cooking, place frozen broccoli in a package or a large glass bowl and cook in the microwave according to package instructions, approximately 5-6 minutes on high.
Heat leftover ham in the microwave to warm.
Dice the cheese spread into small chunks.
Assemble the Ham and Rice Dish
When rice is tender, add 4 oz. cheese spread in small chunks along with the leftover ham. Cover with lid, and allow the cheese to melt for about 7-10 minutes. Stir to combine.
Next, add the broccoli to the rice mixture. Season with kosher salt and freshly ground black pepper. Mix together with wooden spoon.
Top with remaining chunks of cheese spread. Cover with lid and once again allow the cheese to melt. If necessary, heat the pan on low for 2-3 minutes.
Alternate Microwave Instructions
If using leftover ham as well as leftover rice, you may easily prepare this entire dish in the microwave. Simply skip over the preparation of the rice with chicken bouillon cubes.
In a large glass bowl, combine the frozen broccoli and diced onion. Cook according to package instructions, for approximately 5-6 minutes.
Add the leftover rice and ham to the bowl and cook for 3-6 minutes until heated through, stirring halfway.
Next, add chunks of 4 oz cheese spread to the rice and season with kosher salt and freshly ground black pepper. Cook for an additional 5-7 minutes until cheese is melted, stirring halfway to combine.
Top with remaining cheese spread, in chunks. Heat another 5 -7 minutes, until cheese has melted.
Serve ham and rice while warm with a fresh salad and bread and butter.
