Cheesy Ham and Rice with Broccoli is the perfect dish to make with any leftover ham you might have from the holidays. I made this recipe from items I had in my refrigerator and it was so delicious, it became a family favorite and works well after Christmas or Easter!

Prepare Dish in a Large Saucepan on StoveThis dish is really a one pot meal you can prepare on the stove or in the microwave. It’s an easy recipe to make for a weeknight dinner, or when you want a little break from cooking.

Cheesy Ham and Rice with Frozen PeasIngredients for this recipe include leftover ham, long grain white rice (which may also be leftover), cheese spread, and frozen broccoli.

While I prefer broccoli or a combination of broccoli, cauliflower, and even carrots, I’ve also used frozen mixed vegetables or peas. As I always say, use the ingredients that you have, especially for a dish like this.
