Boneless Chicken Thighs are so Tender and Delicious

I love grilling boneless chicken thighs. They cook up fast and easy and are so tender and delicious. When marinated, they are even more juicy. I sometimes question why I even bother with breast meat–but every food has a time and a place, I suppose.

When shopping for boneless chicken, I usually buy frozen bags in bulk, especially when it’s on sale. Aldi often offers 8 pound bags, which is a wonderful purchase!

Ingredients for Grilled Marinated Chicken Thighs

Instructions For Making This Recipe

Gather the ingredients so you have everything close at hand on the counter or table. To begin, place frozen boneless chicken thighs in a microwave-safe bowl and defrost according to product instructions. This marinade makes enough to do 6-8 thighs, depending on their size.

Prepare the Marinade

Place extra virgin olive oil in a small bowl. Add in the liquid ingredients–Worcestershire sauce, soy sauce, and lemon juice. Measure out the Dijon mustard and brown sugar, thyme, dried parsley, garlic salt, and onion salt. Whisk to combine.

Place the thawed chicken thighs inside a gallon freezer bag. Pour the marinade over the chicken and seal the bag. Squish the liquid around the chicken until all of the pieces are well coated. Allow the chicken to marinate for at least 30 minutes, squishing the bag every 10 minutes.

Heat the Grill

While the chicken marinates, go ahead and start heating the grill.

We still have a charcoal grill, but use whatever grilling method you have. I also like to fill the grill with several meats, which saves on charcoal and cooking time.

When the coals are nice and hot, place the chicken thighs on the grill. Grill the chicken, flipping three or four times until cooked through (165-170°F) for about 17-20 minutes total. Allow the chicken to set for about 5 minutes before serving, and remember that the meat will continue to cook while it sets.

Serve the Grilled Chicken Thighs

To serve, place the chicken thighs on a cutting board and slice through the meat at a diagonal. Place pieces on a pretty serving tray or on individual plates. If desired, garnish with fresh herbs. I also like to drizzle a bit of Balsamic Vinegar Glaze over the chicken, which adds even more flavor to this dish. Pretty fantastic, actually.
